Recipe of the Week 4/1

Sausage Skillet 1 Dish Wonder

For todays recipe of the week we’re gonna take it back to my college days when I used to make what my mom calls 1 dish wonders.  These dishes would make 3 servings depending on how much you eat.  I would normally eat a regular sized dinner then have a-little more before bed around 9pm and what ever was left I would finish for breakfest.


1 cup of white rice (you can use whatever rice you want, this is what I had so I used it)

1 package of Italian sausage (sweet or hot is fine)(cut into bite sized circles)

2 eggs (you can use egg whites or the whole egg)


1 Pepper any color cut into small cubes

1/4 Onion cut into thin cubes as well


1.Boil water and add rice when water is boiling, boil until rice is at desired softness

2.In a skillet add some olive oil and peppers and onions if you choose to use them

3.Brown sausage when peppers and onions have softened

4.Separate pan make scrambled eggs

5. Add everything to skillet and mix together
